SPAM occupies a special place in the culinary history of Hawaii, where WII GIs were regularly served SPAM as part of lunchtime meals and rations.  Ever the creative pragmatists, the Hawaiian citizenry followed suit, and slices of the salty and umami-rich loaves began appearing everywhere on the island on top of bowls of rice and in musubi (a rice cake topped with spam and wrapped in nori).  To this day, Hawaiians eat more SPAM per capita than anywhere else in the United States.  This is a fantastic little cookbook that celebrates that unique heritage with a wealth of recipes featuring this delicious pantry staple.
