About the Authors:
The Roux brothers, Albert and Michel, were the first chefs to win three Michelin stars in the UK, at London's Le Gavroche, and trained some of the biggest names in the business, including Pierre Koffman, Marco Pierre White, and Gordon Ramsay. The Roux brothers are largely credited with reinventing British cuisine in the 1960s and 1970s. In 2013, it was estimated that more than half of Britain's Michelin-starred restaurants were run by chefs who spent their early careers in the Roux Brothers' kitchens.
