This is an inventive and lovely cookbook that features many famous Southern recipes "vegetarianized" with modern methods and ingredients.  One thing that I really like about Ms. Phillips' recipes is that her book highlights and improves recipes that are already traditionally vegetarian by removing many of the processed foods that have fallen out of favor in recent times.  Other recipes use interesting ingredients and techniques for replacing the meat in many favorite Southern dishes

All this combines to make a lovely cookbook that would appeal to both vegetarians and meat-lovers who are trying to add more plants to their diet - or anyone who is trying to have less of an environmental footprint on this world.  As a former vegetarian myself, I can honestly say this cookbook would almost certainly make holiday menu planning easier to navigate.
