I grew up watching Paul Prudhomme making the rounds on daytime talk shows and I always thought he had such a lovely vibe. Then I tried the Butterbeans and Rice at French Quarter Festival and it's still one of the best dishes I've ever eaten in New Orleans, so he now occupies a place in my heart.
